Bacon Wrapped Chicken Bites

By Jennifer Reynolds, Sauce Goddess Gourmet LLC
Makes approximately 30 pieces

1 lb - Bacon, thin cut, cut into half for they are about
5 ea - Chicken thighs, boneless, skinless, cut into chunk about 1” around
1/2 cup - Sweet & Spicy Grill Glaze (or Sweet Red Devil Sauce)
50 long tooth picks or skewers, soaked in water

Pre heat oven to 350. Or these can be done on a smoker and grill combination.

1. Place piece of bacon on your cutting board or worksurface. Place chicken on bacon
and wrap until the bacon covers the chicken. Place skewer in so the bacon doesn’t open.

2. Repeat until all pieces are done.

3. Place in your oven (or smoker) and bake on a sheet pan until the bacon is a bit crispy,
about 50 minutes. This amount of time will ensure the chicken is cooked through.

4. Increase oven temp to 400.

5. Remove pieces from the sheet and baste with Sweet & Spicy Grill Glaze. Place into
another grease free pan and return to the oven for 10 minutes to caramelize the sauce.

These can also be finished on the grill. Delicious.
